Some couplers have no lip, some have one that's a little rolled, and others have a flat lip, which is where the AMPLock Trailer Coupler Lock for Flat Lip 2-5/16" Ball Couplers # AMP74FR comes into play.

On the Yakima Rack and Roll Trailer - 66" # Y08106 the height from the ground to the top of the inside of the coupler where the ball sits is 22 inches so then from the bottom of the coupler lip to the ground measures 20 inches when the trailer sits level.
So if you are looking to pick out a ball mount to use with this trailer you'll want to measure from the ground to the top of the hitch opening and whatever the difference between what that dimension is and 20 is the rise/drop you need.... view full answer...
We have not had a chance to install the Class I Draw-Tite Sportframe Trailer Hitch Receiver part # 24967 but we were able to install the Draw-Tite on a 2016. The ground clearance with the hitch installed on the 2016 was 12-1/4" which will most likely be the same on your 2014 Prius V give or take if there is a tire size variance. Please keep in mind the Class I hitch is only capable of towing 200 lbs tongue weight.

As a general rule it is best to choose a ball mount that brings the difference between your coupler and receiver height to "zero" so that the trailer rides level.
You are correct that once a trailer is coupler it could very well reduce the height of the coupler thus keeping the trailer from traveling completely level. Since a ball mount can't always be found that matches exactly the rise or drop that might be needed it is okay to use one within 2" of the rise or drop required.

To tow a smaller trailer with the 2015 Honda Odyssey you will need a hitch, lock, ball mount, ball and wiring. If the trailer has electric brakes, you will also need a 7-Way plug on the vehicle and a brake controller.

The maximum width of the coupler tongue channel is 4-1/2" wide, and 2-3/4" deep. The locking pin is 1-3/4" from the edge of the insert or 1" from the end of the coupler.
